Preparation

Combine equal parts sugar and water over low heat until clear to make simple syrup

Add mint leaves to simple syrup and let cool/infuse

Heat soda water until boiling

Add pack of plain gelatin to boiling soda water and stir until dissolved

Let soda water/gelatin mix cool

Add 4 oz lime rum and 1 oz mint simple syrup to soda water/gelatin mix

Pour mixture into shot glasses

Refrigerate until set

Garnish with lime wheel and mint sprig
