Create mint simple syrup by combining equal parts sugar and water over low heat until dissolved

Remove from heat and drop in some mint leaves

Leave to cool before straining

Combine mint simple syrup, lime juice and rum in pitcher

Stir and add to base of popsicle mold (do not exceed 1/4 of mold or mix will not set.)

Top with club soda

PREPARATION
1. Create mint simple syrup by combining equal parts sugar and water over low heat until dissolved. Remove from heat and drop in some mint leaves. Leave to cool before straining.
2. Combine mint simple syrup, lime juice and rum in pitcher. Stir and add to base of popsicle mold (do not exceed 1/4 of mold or mix will not set.) Top with club soda. Stir gently and drop in more mint leaves.
3. Place in freezer until solid.
