Preparation

Combine Aperol, 1 egg white, and brown sugar simple syrup in a whipper

Charge it with a CO2 cartridge

PREPARATION
1. Create the Aperol foam by combining Aperol, 1 egg white, and brown sugar simple syrup, in a whipper and charging it with a CO2 cartridge. [amount fills whipper]
2. In a shaking glass with ice, combine Aperol, Mezcal, lemon juice, grapefruit juice, brown simple syrup, and aromatic bitters. Shake well.
3. Strain mix into serving glass, leaving room for the foam.
4. Top with Aperol foam.
